Morel Mushrooms with Cream Sauce

"This is probably the best morel dish I have ever made."
Prep Time 30 minutes
Cook Time 20 minutes
Servings 4 People

Equipment

  • 1 large pot to boil pasta
  • 1 large skillet for morels
  • 1 strainer
  • 1 knife

Ingredients
  

  • 12 fresh morels small to medium size
  • 1 lb dried spaghetti can substitute other pasta
  • 1/2 cup salted butter
  • 1/2 cup onion finely diced
  • 4-5 garlic cloves minced
  • 2 cups heavy cream
  • 1/2 cup parmesean shaved
  • 2 Tbsp freshly chopped Italian herbs parsley, basil, oregano
  • Salt and Pepper

Instructions
 

  • bring a large pot of salted water to boil and add pasta
  • clean morels and slice in half
  • in a larger skillet, med/high heat, add butter and diced onions and cook for 4-5 minutes until onions are translucent
  • add morels to skillet and cook for 6-7 minutes. add garlic during the last minute
  • add heavy cream to the morel skillet, reducing heat to medium and let the cream simmer until it begins to thicken (approx 10 minutes)
  • blend in a few tablespoons of pasta water and herbs
  • turn off heat and add the shaved parmesan and salt and pepper to taste
  • Strain the cooked pasta, and add fold in the morel cream sauce
  • serve and enjoy!

Notes

The kids and my husband loved it, and all were in agreement that it was delicious.  We usually fry our morels, so this was a great way try something different.
