Morel Mushrooms with Cream Sauce

"This is probably the best morel dish I have ever made."

Cook Time 20 minutes mins
- 12 fresh morels small to medium size
- 1 lb dried spaghetti can substitute other pasta
- 1/2 cup salted butter
- 1/2 cup onion finely diced
- 4-5 garlic cloves minced
- 2 cups heavy cream
- 1/2 cup parmesean shaved
- 2 Tbsp freshly chopped Italian herbs parsley, basil, oregano
- Salt and Pepper
bring a large pot of salted water to boil and add pasta
clean morels and slice in half
in a larger skillet, med/high heat, add butter and diced onions and cook for 4-5 minutes until onions are translucent
add morels to skillet and cook for 6-7 minutes. add garlic during the last minute
add heavy cream to the morel skillet, reducing heat to medium and let the cream simmer until it begins to thicken (approx 10 minutes)
blend in a few tablespoons of pasta water and herbs
turn off heat and add the shaved parmesan and salt and pepper to taste
Strain the cooked pasta, and add fold in the morel cream sauce
serve and enjoy!
The kids and my husband loved it, and all were in agreement that it was delicious. We usually fry our morels, so this was a great way try something different.
